In 2020, we entered into a collaboration agreement with the University of Gastronomic Sciences in Pollenzo, the academic arm of the international Slow Food association. Thanks to this synergy, we have developed the key concepts of sustainable tourism, agricultural biodiversity, and territorial enhancement.
With the valuable support of the university, we have embarked on an important green transition journey, starting with the recovery of our lands to establish the Tenuta Guardamare farm, the main supplier of local products for the resort. Our primary mission is to prioritize the short supply chain, supporting small local producers and enhancing the raw materials of the territory, cultivated according to ancient traditions passed down from generation to generation.
Our suppliers, committed to respecting nature and its cycles, share our values and strive to ensure the highest quality of products that reach our kitchens. Each ingredient carries with it a story of love and respect for nature, embodying the principles of our sustainable cultivation philosophy.
To translate the objectives of sustainable fishing into concrete actions, we have outlined some guidelines in collaboration with the University of Gastronomic Sciences in Pollenzo. We strive to avoid protected or endangered species, offering our guests only fish, crustaceans, and mollusks with a short life cycle. This approach not only respects the seasonality of species but also actively contributes to the sustainability of the marine ecosystem.
In the heart of our resort lies Tenuta Guardamare, an agricultural estate born in 2021 with a bold mission: to preserve biodiversity and enhance the gastronomic excellences of our territory. The passion for this noble objective translates into a synergistic collaboration with Slow Food and the University of Gastronomic Sciences in Pollenzo
Every fruit of our land is cultivated with love and respect, following the principles of organic agriculture. This daily commitment allows us to harvest fresh and genuine products every day that become the protagonists in the menus of our restaurants, creating an authentic bond between the land and the table. The Violet Artichoke of the Val di Cornia stands out as one of the most significant cultivations of our vegetable garden, a symbol of an indissoluble bond between our kitchen and Tuscan roots. This vegetable inspired, in 2022, the creation of a Slow Food community, aimed at safeguarding an ancient local tradition now preserved by us and a few other entities.
In our 30 hectares of land, we cultivate ancient varieties of wheat such as Senatore Cappelli and Gentil Rosso with dedication. From these precious crops comes the flour that we proudly use in our kitchens for the preparation of bread and pasta. These varieties of grains, rich and nutritious, give the products a unique lightness and flavor, preserved and enhanced by stone grinding. A tribute to the intrinsic goodness of artisanal tradition.
In the evocative setting of Baratti, just a stone’s throw from the sea of Tuscany, lies the vineyard of our Tenuta Guardamare, home to Vermentino and Viognier vines. Here, we wholeheartedly embrace the principles of sustainable viticulture, using natural fertilizers and adopting environmentally friendly production practices.
The collaboration with the historic Michele Satta winery, in the heart of Bolgheri DOC, gave birth in 2020 to our Marittimo wine, both white and red. Spacious, sunny, and rich in nuances, the white Marittimo wine savors the heritage of Vermentino and Viognier grapes. The red Marittimo, with Sangiovese as the protagonist, tells Mediterranean stories of blackberry, plum, and cherry
Recently, we decided to enrich our wine heritage with two new labels: Energia, a harmonious fusion of Vermentino and Viognier, and Verità, an aromatic canvas of flowers and ripe fruit, born from the delicate fusion between amphora and barrique.
From the encounter between Tenuta Guardamare and the award-winning Nannoni Grappe, two unique spirits were born, symbols of warmth, conviviality, and sharing. Grappa Marittimo, young and enveloping, captures the aromas of Vermentino grape pomace. Gin Gin-eprò, with aromas of botanical plants from the Riva degli Etruschi park, offers a fresh and authentic experience with every sip, transporting the palate on a journey through the scents of our land.
From our deep bond with Tuscany arises the extra virgin olive oil of Tenuta Biliotto, located in Bagno a Ripoli, above Florence.
Our organic oil is the result of a blend of the finest Tuscan varieties, distinguished by its brilliant color and pleasant spicy aftertaste, the result of the age-old art of cold pressing. From harvest, to the mill, to conservation in argon, we are committed to maintaining its organoleptic qualities unchanged. The microclimate that caresses the olive trees gives the oil freshness and intensity in flavors and aromas, transporting those who taste it directly to the green hills of Tuscany.
35 hectares of centuries-old parkland inhabited by more than 8,000 majestic trees and shrubs, cared for in collaboration with Prof. Ragazzi, a renowned Italian phytopathologist, with the aim of promoting biodiversity and ensuring a lasting ecological balance.
The captivating scents of the Riva degli Etruschi park have been skillfully captured within our courtesy line, RivSence, the result of a precious collaboration with master perfumer Sileno Cheloni. Lavender, juniper, maritime pine, and other local essences blend into a fresh, versatile fragrance with relaxing properties.
On our beach, bathed by the crystal-clear sea awarded with the prestigious Blue Flag, sustainability is at the heart of our daily commitment.
